Coming soon: A fancy toast pop-up

If you’ve been keeping up on North America’s hottest / most inexplicable food trends, you’ll know that San Franciscans are losing their minds (and the contents of their wallets) over upscale takes on that favourite childhood breakfast, the humble slice of toast. Several of the city’s restaurants and cafes have begun offering locally baked bread smothered with cinnamon sugar, artisanal marmalade, seasonal fruit compote, and – of course – the almighty avocado. San Fran just might have hit on the perfect food trend: It’s nostalgic, it’s as trashy or as healthy as you want it to be, and dang it, it just looks so good in top-down food photography!

Now Toronto is getting in on the action thanks to Toast, a pop-up restaurant set to serve up slices for four weekends in the Distillery (45 Mill) this spring. The spot is the brainchild of Amrita Singh, Lindsey Agnew and chef Jo Lusted, who met years ago working on CBC’s Steven and Chris. They’ve joined forces to create the new spot, courting local bakeries and picking up a conveyor-belt toaster that churns out 350 slices in an hour. 

Sure, you could make your own toast at home and save the $6 a slice you’ll spend at Toast. But does your kitchen have dark chocolate sourdough or cheddar ciabatta? How about jars of salted caramel milk jam or birthday cake batter spread? Their toppings run the gamut from sweet to savoury – and, lest you think this is some kind of highfalutin’ health food, the Toast team says, “There are no gluten-free or uber-health-conscious options on the menu.”

When Toast opens on May 7, those slices of bread just might end up being the toast of the town.
