WHY: Some French producers practise sustainable winemaking and keep it to themselves. Apparently the previous generation of organic wines were good for the earth but not for the palate. Hence the coyness on matters environmental. Since 2009, du Seuil has been converting its vineyards to organic. Tastes like it’s working: savoury, smoky bouquet is followed by measured fruit riffling across taut structure. Bord-acious. For now or for the cellar.
