WHY : Another bird-worthy choice. Not to be confused with the more publicized nouveau, this wine comes specifically from the Brouilly region of Beaujolais. Soft, light and bright, it has a spicy kick that will help cut through the gravy slush. Look for the bottle that resembles a bowling pin.

WHAT : Remy Martin XO Excellence Cognac

RATING : NNNNN

WHERE : Cognac, France

WHY : Aged an average age of 25 years, this cognac doesn’t have to show its ID. Its maturity is apparent in the glass and the mouth, suffusing both with a rich glow. A knockout combination of intensity and smoothness. Expensive, yes, but you’ll be drinking this slowly.
