WHY: In the Beaujolais region, red wine is made exclusively from Gamay grapes. Simple Beaujolais like this is suitable for relaxed drinking enjoyment. Which is not to say we’re slumming. It’s refreshing, racy juice with Gamay’s signature eccentricities (banana, anyone?) kept in line by Deboeuf, which is synonymous with Beaujolais. Pull this cork when you pull the pork.
