Highland Park Dark Origins

Due to its ever-expanding “it” factor, the time necessary to properly mellow and mature whisky has become a damaging inconvenience in the face of intensifying demand.

The Scotch whisky industry has devised clever ways to address this conundrum, like the gradual obliteration of bottle age statements and crafty barrel aging programs. First-fill sherry butts and new American oak casks impart a lot of flavour quickly. And as long as the three-year minimum aging law is upheld, Scotch producers are in whisky business. 

Highland Park Dark Origins is one such heavily sherried Scotch. Since I’m an incurable sherry fiend, the creamy dark chocolate, baking spice and candied orange peel notes and savoury edge that emerge in this lightly peated whisky are right up my alley. The Dark Origins refer to the founder’s early days as an illicit distiller, so I also appreciate the whiffs of badass surrounding this dram, which, not surprisingly, makes a great nightcap.
