WHERE: Casablanca Valley, Chile
WHY: When it comes to discussing wine, rarely does anyone mention yeast. Mind you, nobody’s ever come down with a French oak infection, so perhaps that omission is understandable. But when fermentation is prompted by wild, naturally occurring yeast, then it’s time to break the silence. If I were going to pinpoint the wild yeast’s presence here, it’s in the bouquet, with its hint of nuttiness. Otherwise, this is a textbook punchy, bright, lemony Chilean Chardonnay. Bring on the white pizza.
