What’s important here is the concept: work with what you’ve got, experiment, combine different types of liquor and see what happens. It’s not like science class – nothing will explode, and you may discover a new favourite. If it’s a little too stiff, just add a dash of sugar, a squeeze of lemon, shake with ice and top with soda.
INGREDIENTS
Dash of bitters
one-fifth measure port
one-fifth measure amber rum
three-fifths measure whisky
METHOD
Pour ingredients over ice in a short, wide glass. Stir.
