WHY: The Bellini is made of equal parts sparkling wine and puréed peaches. Sort of like if dance provocateur Peaches and Bubbles from the Trailer Park Boys had a love child. (You heard it here first.) In keeping with the drink’s Italian roots, the sparkling portion should be Prosecco like this refreshing, reliably balanced rendition by Bottega. If you find yourself a little worse for wear on the Pride morning-after, the Bellini would definitely be a good way to drink away the pain.
