Few restaurateurs take their customers’ health as seriously as the Rule’s newly married chef, Marta Kusel, and partner in business and now matrimony Katie James.

Alongside their remarkable meat loaf muffins ($8) and cola-braised brisket panini ($10), find the veggie likes of maki ‘n’ cheese – think Kraft Dinner sushi ($8) – beer-battered “phish” and chips ($10), and stir-fried tofu over sesame-scented buckwheat noodles ($8 small/$11 large), much of it gluten-free to boot.

Their veggie burger sees a deep-fried falafel-like patty spread with vegan almond aioli ($8), while the meat-free meat loaf in red-wine peppercorn gravy (Veggie Volcano, $12) gets sided with potato, leek ‘n’ chive pancakes as crisp as Bubie’s. Apart from their brunch-only Breakfast Pie and its infamous bacon crust ($10 with organic greens), they keep it vegan and gluten-free with French toast with tea-poached pears in maple syrup ($10.50) and a side of house-made tofu “bacon.”
