THE EVERYDAY VEGAN

THE EVERYDAY VEGAN by Dreena Burton (Arsenal Pulp), 205 pages, $22.95 paper. Rating: NNN

Tofu or not tofu? Those who choose a vegan diet — one that eliminates anything involving animals — do so for many different reasons, be they health, moral or environmental. Born-again vegan Burton’s earnest recipe collection may not convince beefeaters to drop their steak knives and start tucking into things like carrot zucchini crumb casserole or grilled soy-cheese sandwiches, but the already converted or curious will find a range of diverse animal-free recipes, the tastiest of which are pictured in full colour across the book’s eight-page gastro-porn centre spread.
