Bee’s Knees

Simple and refreshing with an underlying decadence, the Bee’s Knees was a hit during the 1920s – probably because its prominent honeyed notes masked the taste of bathtub gin. Sub in white rum and you have an equally delectable Canchánchara.

  • 2 oz gin
  • ¾ oz honey syrup (1:1 honey and water)
  • ¾ oz fresh lemon

Shake well and strain into a chilled cocktail glass. Garnish with a lemon twist.

Note: this is an easy cocktail to dress up. Add a touch of yellow chartreuse, shake with fresh ginger or finish with a float of sparkling wine.
