Fans of Focaccia and its innovative chef, Sam Gasira , will want to book a table before he leaves the midtown hot spot permanently October 4 for a well-deserved sabbatical. In his place, Pedro Quintanilla - ex of Xango, La Carreta and Latitude as well as the misguided Mojito - will give the fusion kitchen a timely Latin twist.
