Easy indulgent eating for the great outdoors

With summer in full swing, most people in Toronto are looking at ways to get out of the city for a weekend (or two) and relax around a campfire. But before you pack up the cooler with the typical backcountry or cottage fare, check out the healthy fruit-focused recipes we’ve collected here that all incorporate the best part of the outdoors – snacks roasted on an open fire. 

Banana Cacao Boat

One of the most versatile camping treats, you can adapt a banana boat for a variety of tastes. The classic recipe calls for a banana, chocolate pieces and marshmallow, but you can experiment with peanut butter, almond butter or Nutella too.

Chocolate Cake Baked in an Orange

Don’t waste your fruit peelings – use them as cooking dishes for dessert! A carefully scooped-out orange can be surprisingly useful for baking simple cakes after a long day of swimming.

Fibre 1 snacks are ideal for healthy treat recipes because you can adapt them so easily, depending on what you’ve got on hand while camping. We think this one is a delicious camping treat if you roast the strawberries first.

Grilled Pineapple with Cinnamon, Nutmeg and Vanilla

Whole pineapples are rugged enough to endure the backcountry, and when you expose them to an open flame, you get a totally unique flavour that will serve as a great healthy treat around the campsite.

Peach Melba Lemon Bar

On a campfire, the natural sugars in fresh peaches caramelize into a dessert that you’ll be looking forward to all day. Use this trick and personalize this Fibre 1 snack for a true hit around the bonfire this summer. Don’t worry, the Fibre 1 bars individually wrapped, so they’ll be no fighting around the fire.
