Gelato, ice cream: whats the difference?

Gelato is not just fancy ice cream or merely an Italian version. There really is a difference between the two frozen treats.

Ice cream is made with cream and eggs and traditionally contains a minimum 8 per cent butterfat, though higher is the norm in premium brands.

Gelato is made with eggs and milk instead of cream, lowering its butterfat content to between 3 and 5 per cent. Because it’s not churned as quickly as ice cream, gelato also contains less air.
