Seven recipes for next-level winter eating

Winter should make chefs out of all of us. One of the benefits of living in a city like Toronto is that you should have access to all the seasonal ingredients you need to make killer meals. We’ve collected a few winter recipes to put that theory to the test.

Roasted Beer Can Cream of Chicken Soup

The star ingredients of this soup include a whole chicken, beer and a can of Campbell’s Condensed Chicken Soup. You can make it one of three ways: on a barbecue, in an oven or in a skillet on your stove. Be sure to drop by The Cantina by Campbell’s (501 Queen West) before February 21 to taste it before you make it. (Recipe)

Vegan White Bean Cassoulet

There are many different versions of cassoulet – the French stew of sausage, pork and white beans – but this recipe goes in a unique direction by omitting the meat. The result is a low-fat dish that is easy to make and features garlic breadcrumbs for flavourful texture. It’s also hearty enough to keep you warm this winter. (Recipe)

Spicy Vegetarian Ramen

This is a bowl of ramen that will put your Mr. Noodles to shame. Pick up some fresh kale, carrots and Campbell’s Ready to Use Vegetable Broth to get started. The best part of this recipe is the varying textures of the vegetables and savory garnishes. And you can make it a vegan meal by omitting the eggs. (Recipe)

Enhanced Mac and Cheese

NOW’s recent issue on macaroni and cheese highlighted just how versatile this dish can be. Chefs from Toronto restaurants La Carnita, Fidel Gastro, Cut the Cheese and Cheesewerks all chimed in with their own unique suggestions on how to transform a simple box of Kraft Dinner into a meal worthy of a snowstorm. (Recipes)

There are a ton of variations on Khao Soi across Thailand, so once you get the hang of this recipe you should try to experiment a bit. Anyone new to Thai cooking – or just new to Campbell’s Thai Chicken and Rice Soup Kit – will find this dish a great place to start making delicious curries that combine flavours of lime, coconut milk and Campbell’s Ready to Use Chicken Broth. (Recipe)

Creamy Tomato Black Bean Soup

Fresh lime and crispy tortilla strips make this a Mexican-inspired soup that can stand on its own or as part of a larger spread with homemade tacos. Preparing this recipe is simple – you just need to add black beans and fresh ingredients to a can of Campbell’s Creamy Tomato Soup for a weekday winter meal. (Recipe)
