Pour the Pimms

If youre a tennis fan, youve most likely been sucking back Pimms Cups, Britains favourite summer tipple and Wimbledon staple, for weeks already.

But do we really need the excuse of whacking balls around a prissy court to enjoy a tall, refreshing cup o Pimms? Certainly not, dahling.

The herbal liquor has been a British summer standard since the 1800s, when it was invented by an enterprising oyster pusher and publican by the name of James Pimm. It looks like tea but is gin-based, with an alcohol content moderate enough to drink all afternoon a quintessential British tipple if there ever was one.

Once upon a time, Pimms could be found in six styles, or cups, each based on a different spirit, from Scotch to brandy. Currently, No. 1 Cup is the only version available in Ontario, and luckily its the original expression.

Traditionally, Pimms is served tall, fizzy and fruity, dressed up with cucumber, citrus and mint and mixed with lemon-lime soda, but the real beauty of Pimms is that it makes easy friends. You can throw in whatever you like, including pretty much any spirit. Its extremely hard to screw up a cup.

Mix one at home (best enjoyed in the garden) or hit the town at Pimms oclock.

The Ace Diner (231 Roncesvalles, 416-792-7729) does an Italian interpretation with Fernet Branca, muddled cucumber, lemon and mint topped with ginger ale ($13.50)

Look for an earl grey-infused Pimms with amontillado sherry, ginger syrup, lemon and soda at Cocktail Bar (923 Dundas West, 416-792-7511,).

Drink as thirsty Brits do at Food & Liquor (1610 Queen West, 647 748 7113, @FoodandLiquorTO), where you can kick it on the back patio with a pitcher o Pimms ($38).

The Drake Hotel (1150 Queen West, 416-531-5042) serves a classic cup with citrus, mint and lemon-lime soda ($14) for those who prefer not to tamper with the old school.
