Foodies take note! The hotly anticipated Blackbird Baking Co. (172 Baldwin, at Kensington, blackbirdbakingco.com, @bbirdco) has finally opened in the Market a few doors down from Sanagan’s (sanagansmeatlocker.com, @sanagans). Launched last Saturday, the bakery replaces the misguided Cobs (cobsbread.com, @COBSBread).

Blackbird owner and ex-Canoe sous Simon Blackwell first sold his exceptional loaves while helming the kitchen at Soma (somachocolate.com, @SomaChocolate). You could also get them at select local restaurants – Parts & Labour (partsandlabour.ca, @partsnlabour), Bellwoods Brewery (bellwoodsbrewery.com, @bellwoodsbeer) – and specialty shops, but the Kensington site is his first bespoke retail outlet.

The set-up’s not that different than Cobs’, with a working bakery out back and a small display area up front. Six customers, two shopping trolleys and an SUV stroller, and the joint is sure to be a zoo come Pedestrian Sunday (pskensington.ca, @pskensington).

They’ll find shelves and baskets stocked with whole wheat and olive oil ciabatta ($4), Moroccan flatbread ($4.50) and pecorino pizza bianca ($5). House-baked focaccia get turned into panini of smoked prosciutto, mozzarella and arugula ($7.50). Those with a serious sweet-tooth should head straight for the chocolate hazelnut cakes ($4) and glazed brioche cinnamon buns ($2.75).
